Preparation Method

  • Chop the brinjals into four.
  • Chop the tomatoes and onions to the size of the brinjal.
  • Grind pepper corn, fennel, cinnamon, ginger, chilli powder and garlic to a fine paste.
  • Heat a pan with Idhayam Sesame Oil.
  • Saute curry leaves and onion.
  • Add brinjal, tomatoes and fry.
  • To this add the ground masala.
  • Simmer to a low flame and fry.
  • Pour required amount of water and allow it to boil.
  • Add turmeric powder, salt and stir well.
  • When the brinjals are done and the gravy thickens, garnish with coriander leaves.
  • Remove from fire and serve hot.
