Preparation Method

  • Peel the purple coloured outer layer of the florets and the inner tallest bud.
  • Steam the banana flowers in three cups of water mixed with two tablespoon of butter milk and strain it.
  • Grind cumin seed, red chilli and shallots.
  • Soak the tamarind and extract the juice.
  • Mix the ground masala to tamarind extract.
  • Heat a pan with Idhayam Sesame Oil, temper mustard, add curry leaves and pour the tamarind extract adding salt and turmeric powder.
  • Add the cooked plantain flowers.
  • Allow it to boil.
  • Cook till the gravy thickens and oil separates from the gravy.
