Preparation Method

  • Soak rice, drain and pound it.
  • Steam the rice flour in a steamer.
  • Boil water, powder the jaggery and add it to the water.
  • Add the water little by little to the rice flour and knead to a smooth dough.
  • Grease the idli plate with ghee.
  • Take the dough in the Idiyappam mould.
  • Squeeze it in a circular motion.
  • Allow it to cook for seven minutes.
  • Make such jaggery idiyappams with rest of the dough and serve hot.
