Preparation Method

  • Chop the ladies finger to two inch length.
  • Soak the tamarind in rice washed water.
  • Extract the tamarind juice.
  • Peel the garlic.
  • Chop the shallots finely.
  • Dice the tomatoes.
  • Heat a pan with Idhayam Sesame Oil.
  • Temper mustard,  add urad dhal, asafoetida and curry leaves.
  • Saute shallots and garlic.
  • Add the chopped ladies finger and fry well.
  • Add the tomatoes and fry.
  • To this add tamarind extract, kuzhambu powder, turmeric powder, salt and stir well.
  • Simmer to a low flame and allow it to boil until the gravy thickens.
  • Remove from fire and serve.
