Preparation Method

  • Take the florets.
  • Discard the purple coloured petal and the budded long stem.
  • Steam the florets in hot water with salt.
  • Strain the water completely.
  • Grate the coconuts.
  • Chop the shallots, curry leaves, coriander leaves finely.
  • Grind together banana flower, grated coconut, turmeric powder, chilli powder, fennel, ginger, chilli, roasted chana dhal and salt.
  • Add chopped shallots, coriander leaves, curry leaves to the ground banana flower batter.
  • Take a small ball of the batter and pat it slightly.
  • Heat Idhayam Sesame Oil in a deep frying pan, when it become hot, flip the vadas and fry both the sides till crisp .
  • Serve hot.
