Preparation Method

  • Mash the cooked brinjals with salt.
  • Dice the shallots, green chilli, ginger and garlic finely.
  • Soak the tamarind and extract the juice.
  • Heat the pan with Idhayam Sesame Oil.
  • Temper with mustard.
  • Saute shallots, garlic, green chilli and ginger.
  • Pour the tamarind extract, turmeric powder and salt.
  • When it starts to boil add the mashed brinjal and stir well. 
  • Cook until it becomes to a thick consistency.
  • Remove from fire and serve hot.
