Brinjal 500 gms
Moong dhal 1 teaspoon
Mustard ½ teaspoon
Asafoetida 1 pinch
Big onion 2
Garlic paste 1 teaspoon
Coriander powder 1 teaspoon
Curd 1 teaspoon
Poppy seed paste 1 teaspoon
Powdered jaggery 1 teaspoon
Sesame seed paste 1 teaspoon
Cinnamon 1 piece
Clove 2
Turmeric powder 3 pinch
Dried grated coconut paste 3 tablespoon
Chilli powder 2 teaspoon
Tamarind 1 gooseberry sized
Coriander leaves 5 tablespoon
Salt as required
Idhayam Sesame Oil 4 tablespoon
Preparation Method
Chop the stem, slit the brinjals and immerse in salted water.
Soak the tamarind and extract the juice.
Dice the onion finely.
Heat a pan with Idhayam sesame oil.
Temper moong dhal, mustard and asafoetida.
Saute onion.
Add garlic paste, coriander powder, brinjal and fry well until the colour of the brinjal changes.
To this add curd, poppy seed paste, powdered jaggery, sesame seed paste, chilli powder and fry well.
Add turmeric powder, salt, coconut paste, Chilli powder and fry until everything blends together.
Pour the tamarind extract and allow it to boil.
When the brinjal is done and the gravy thickens, sprinkle coriander leaves, remove from the fire and serve hot with rice.
