Preparation Method

  • Chop the stem of the brinjals and slit it into four from behind. The brinjals must be whole.
  • Soak tamarind in water and extract 400 ml of the juice.
  • Chop the onions finely.
  • Mix together sugar, sambar powder salt along with water and stuff the brinjals.
  • Heat a pan with Idhayam Sesame  Oil.
  • Pour the tamarind extract and allow it to boil.
  • Add the brinjals and fry till the oil separates and the masala coats the brinjals.
  • Heat a small pan with Idhayam Sesame Oil.
  • Add  mustard, when it splutters add fenugreek, urad dhal, channa dhal and curry leaves.
  • Add coriander leaves, stir well and  pour it over the brinjal.
  • Remove from fire and serve.
