Preparation Method

  • Chop the ladies finger into one inch long.
  • Dice the onion and green chillies finely.
  • Chop the tomatoes into 6.
  • Dry roast cumin seed and coriander seed.
  • Grind the coconut along with tamarind.
  • Heat a pan with Idhayam sesame oil.
  • Add onion and saute till reddish brown.
  • Add turmeric powder, ginger paste, garlic paste, pound spices and stir.
  • To this add tomatoes and fry till soft.
  • Flip the ladies finger and fry well.
  • Add mint leaves, coriander leaves, ground coconut and stir well.
  • Add green chillies, chilli powder, salt and stir for three more minutes.
  • Pour required amount of water and coconut milk.
  • When the ladies finger is done and the gravy thickens remove from fire and keep aside.
  • Heat a mini pan with a teaspoon of Idhayam sesame oil. Temper mustard, split red chillies, garlic, curry leaves and add it to the ladies finger.
