Preparation Method

For Upper Crust:
  • Sieve together maida, baking powder and salt.
  • Mix it along with ghee and knead to a smooth dough.
For the filling:
  • Cook the peas and mash it coarsely.
  • Heat a pan with Idhayam Sesame Oil, temper cumin, green chilli-ginger paste and stir.
  • Add coriander powder, fennel powder, peas, salt, gram flour and fry for two minutes.
  • Adjust salt, remove from fire and keep aside.
For kachori:
  • Divide the dough into six equal parts.
  • Place a ball on the rolling board and roll it to a three inch thick diameter circle.
  • Place the filling at the centre, sprinkle water at the edges and close from all the sides.
  • Roll it again to four inch circles.
  • Make such kachoris with rest of the dough.
  • Heat a deep frying pan with Idhayam Sesame Oil, and deep fry both the sides till crisp and golden brown.
  • Serve hot.
