Preparation Method

  • Parboil the potatoes and chop into two.
  • Chop the ginger, garlic and fenugreek leaves finely.
  • Split the red chillies.
  • Heat a pan with Idhayam sesame oil.
  • Temper cumin seed, when it sizzles add the coriander seed and fry.
  • Add asafoetida, chilli powder and fry.
  • To this add the red chilli and fry. Simmer to a low flame.
  • Add the chopped ginger and garlic.
  • Flip the potatoes and fry.
  • Increase the flame while frying potatoes.
  • Fry till golden brown and the ginger garlic, cumin seed and coriander seed coats the potatoes.
  • Add chilli powder, turmeric powder and fry for two minutes.
  • Add the greens, simmer to a low flame, sprinkle water and let the greens to cook.
  • Fry until everything blends together.
  • Remove from fire and serve.
