EGGS AND BAMBOO SHOOT CURRY

Preparation Method :

  • Heat the oil and fry the eggs till they turn slightly golden. Remove and keep aside.
  • In the same pan add the stock and the remaining vegetables, bring it to boil. Add the eggs and the remaining ingredients.
  • Boil the gravy and continue to cook for about 10 - 12 minutes or until the stock merges into the vegetable. Remove from heat and serve with plain rice.

INGREDIENTS

  • 750 ml vegetable stock
  • 250 grams bamboo shoots cut into very thin strip
  • 6 boiled eggs
  • 100 grams button mushrooms - whole or cut into circles
  • 1 carrot - cut into strips
  • 1 teaspoon pepper powder
  • 1 tablespoon coriander leaves - chopped
  • 4 sprigs spring onions
  • 4 teaspoons Cooking oil
  • 2 teaspoons soya sauce
