CATALAN BROAD BEAN CASSEROLE

Catalan broad bean casserole is first prepared by frying bacon and sausage. Mixture of beans, bouquet garni, summer savory and spices makes the dish excellent. This dish can be served as a main dish blending it your favourite salad. Surely, the taste of it will stick to your mind.

50 minutes

Preparation Method :

  • Heat the margarine in a large flameproof casserole or heavy saucepan and fry the bacon and sausage until lightly colored.
  • Remove with a slotted spoon and reserve.
  • Saute the onion, garlic and tomatoes in the fat remaining in the pan until soft.
  • Add the bouquet garni, summer savory and spices. Stir in the beans, bacon and sausage, then pour the wine and stock into the casserole.
  • Season with pepper, and salt if necessary. Cover and cook over a low heat for about 30 minutes.Remove the bouquet garni.
  • Serve piping hot, as a main dish.

INGREDIENTS

  • 200 grams margarine
  • 500 grams lean bacon, derinded and diced
  • 500 grams butifarra or garlic sausage, sliced
  • 2 onion, peeled and chopped
  • 4 cloves garlic, peeled and chopped
  • 4 tomatoes, skinned and chopped
  • Bouquet garni
  • Few leaves summer savory
  • 2 teaspoon ground cinnamon
  • 4 cloves
  • 3 kg broad beans, shelled
  • 300 ml sweet red wine
  • 300 ml ham or chicken stock
  • Freshly ground black pepper
  • Salt
