BAKED POTATO RING WITH SWEET-SOUR FILLING

Preparation Time :
45 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Mix all ingredients of the filling in a bowl together and chill for ½ hour.
  • Mix all ingredients of the potato ring well. Take a ring mould, grease well.
  • Put potatoes in it. Press well.
  • Un-mould onto a baking plate.
  • Brush with some melted butter or ghee.
  • Bake for 15-20 minutes in a preheated oven at 200°C, till light brown.
  • Remove from oven. Put salad inside the ring and serve, decorate with lemon wedges.

INGREDIENTS

Potato Ring

  • 500 grams potatoes - boiled, peeled and mashed while warm
  • 2 teaspoon black salt
  • 2 teaspoon pepper
  • Salt or to taste
  • 3 tablespoon butter or ghee
  • 2 tablespoon fresh coriander leaves - chopped
  • Juice of 2 lemons 

Sweet-Sour Filling

  • 1 apple - cut into
  • ½ " pieces without peeling
  • 100 grams paneer - cut into cubes
  • ½ " pieces boiled sweet potatoes - cut into ½ " pieces
  • 1 small cucumber  - cut into ½ " pieces
  • 1 tablespoon toasted walnuts
  • 2 teaspoons Raisins
  • Salt and pepper to taste
  • 150 ml honey
  • 3 tablespoon lemon juice
